Easy Grilled Veggie Skewers with Halloumi

Planning on a crowd for your backyard bbq?

Grilling for many people can get pretty stressful with all the shopping, prep and grilling.  This veggie skewer recipe is the low stress dinner you need to serve so you have time to spend with your family and guests and serve a pretty impressive bbq spread!

The marinade can be made a day ahead and the veggies can be sliced and added to a big bowl in the refrigerator until you’re ready to marinate and skewer them.  They cook quickly on the grill, freeing you up to enjoy your evening.

Double the marinade recipe and cut up some chicken thighs in 2-inch cubes to make skewers.  Pour half the marinade over the chicken and marinate for at least 30 minutes and up to 2 hours in the refrigerator.  When you’re ready to grill, thread on skewers and cook along with your veggie skewers.

What is Halloumi?

If you’ve never tried Halloumi (or even heard of it before!), get ready for a delightfully delicious surprise!

Halloumi is a salty, squeaky, semi soft cheese from Cyprus.  It’s made from a mixture of goat and sheep’s milk and has a high melting point. So it’s perfect to include cubes of Halloumi with your veggie skewers because it will not melt away on your grill.  It is vacuum packed in brine with herbs and will last in your fridge unopened, for 4 months.  It doesn’t taste “cheesy and compliments anything you serve it with.

You can find it in any Mediterranean Market, Whole Foods, Sprouts and possibly larger grocery stores.  When you’re ready to grill, remove from the packaging, there is no need to rinse it, just pat it dry with a paper towel.  You can slice it in planks or dice it into cubes.  You don’t want to make the cubes too small in order to avoid cracking when you thread them on the skewer.  Brush them with a little olive oil before frying or grilling.

You can enjoy grilled or fried Halloumi all by itself, used as ‘croutons’ in a salad, add it to sandwiches, or with grilled or roasted veggies.

Ingredients
  

  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Red Wine Vinegar
  • 2 teapoons garlic minced
  • tablespoons Fresh Oregano minced
  • 1 teaspoon Fresh Mint minced
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Fresh Ground Pepper
  • 1 pound Halloumi Cheese Cut into ¾-inch cubes
  • 3 medium Zucchini Sliced ½-inch thick
  • 1 medium Red Onion Cut into 1-inch sections
  • 1 pint Grape tomatoes

Instructions
 

  • Soak the bamboo skewers in water for at least 15 minutes
  • Whisk together the oil lemon juice, vinegar, garlic, oregano and mint. Add the salt and pepper
  • In a large bowl, add the zucchini, onion, tomatoes and Halloumi. Add the marinade and toss to combine
  • Thread on the bamboo skewers
  • Heat the grill to medium-high and grill on direct heat, turning them every 3-4 minutes.
  • Serve the skewers right off the grill, or remove the veggies and Halloumi and toss together in a large bowl. Squeeze a little lemon juice over the grilled skewers before serving.
  • Serve with Warm Pita bread and Tzatziki sauce (optional)

Notes

• This marinade is easily doubled and can be used to marinate chicken
• Serve with Tzatziki sauce!
