Soak the bamboo skewers in water for at least 15 minutes
Whisk together the oil lemon juice, vinegar, garlic, oregano and mint. Add the salt and pepper
In a large bowl, add the zucchini, onion, tomatoes and Halloumi. Add the marinade and toss to combine
Thread on the bamboo skewers
Heat the grill to medium-high and grill on direct heat, turning them every 3-4 minutes.
Serve the skewers right off the grill, or remove the veggies and Halloumi and toss together in a large bowl. Squeeze a little lemon juice over the grilled skewers before serving.
Serve with Warm Pita bread and Tzatziki sauce (optional)

• This marinade is easily doubled and can be used to marinate chicken• Serve with Tzatziki sauce!
