Veggie Skewers with Halloumi

Ingredients
  

  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Red Wine Vinegar
  • 2 teapoons garlic minced
  • tablespoons Fresh Oregano minced
  • 1 teaspoon Fresh Mint minced
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Fresh Ground Pepper
  • 1 pound Halloumi Cheese Cut into ¾-inch cubes
  • 3 medium Zucchini Sliced ½-inch thick
  • 1 medium Red Onion Cut into 1-inch sections
  • 1 pint Grape tomatoes

Instructions
 

  • Soak the bamboo skewers in water for at least 15 minutes
  • Whisk together the oil lemon juice, vinegar, garlic, oregano and mint. Add the salt and pepper
  • In a large bowl, add the zucchini, onion, tomatoes and Halloumi. Add the marinade and toss to combine
  • Thread on the bamboo skewers
  • Heat the grill to medium-high and grill on direct heat, turning them every 3-4 minutes.
  • Serve the skewers right off the grill, or remove the veggies and Halloumi and toss together in a large bowl. Squeeze a little lemon juice over the grilled skewers before serving.
  • Serve with Warm Pita bread and Tzatziki sauce (optional)

Notes

• This marinade is easily doubled and can be used to marinate chicken
• Serve with Tzatziki sauce!
